Peach and Coconut Popsicle Recipe ~ Summer on a Stick!

Nothing says summer quite like fresh juicy peaches and the delicious aroma of coconut! This peach and coconut popsicle recipe is the perfect refresher for hot summer days. Keep a stash in your freezer to delight kids and adults alike.

What you’ll need:

  • 3 cups fresh peaches, peeled and pits removed
  • 1 cup fresh raspberries
  • 1 cup coconut milk
  • 1 tbsp honey

Directions:

  1. Blend the ingredients until smooth
  2. Pour into popsicle molds
  3. Place tops on mold and freeze

For a more “adult” version you can add a couple of shots of Peach Schnapps or your favorite rum.

So what is so extra special about this popsicle recipe aside from it being delicious?

Well, first and foremost the peaches are an excellent source of fiber, Vitamin A, Vitamin C and potassium. And of course coconut milk has so many benefits if its own. It contains lauric acid to help boost the immune system as well as fatty acids that are believed to promote heart health. The raspberries are rich in anti-oxidants and also provide an extra dose of Vitamin C. What’s not to love?!

      No problem! It works great with other fruits too, but my favorite is peach!
